The Delta T moisture/dryer control system consistently reduces the
moisture variation of food products exiting dryers by at least 30% and sometimes
more. The Delta T is based on a unique “inside-the-dryer” moisture sensor
consisting of two temperature sensor and a mathematical model. (more info) This reduction
in variation enables the mean moisture content, where applicable, to be
increased thus increasing production, reducing unit energy consumption and
improving quality. (Brochure) An on-line water activity control option is available that allows food products to be safely produced at the maximum allowable
moisture content consistent with a water activity value that will not allow the
